TASTES LIKE EVERY PEACH EVER - SWEET SWEET NECTAR IN A CUP

This is our third time having a peach co-ferment in. One of the best sellers. This time it’s grown by Luz Helena Salazar, another coffee superstar (and married to Jairo Arcila). I think the original description we have for our peach coferments still holds below. Incredible, wild, silly stuff. Eagle eyed of you might notice the price on this, the peach lot this time is a touch more expensive than the other co-ferments as the green bean cost is more.

Well, well, another silly fruit maceration lot. We’ve had a bunch of these so far so you might know what to expect. If not, these lots are unlike anything else. The coffee cherry is fermented alongside ripe fruits with extracts of yeasts used in wine making - The result? A coffee that absolutely sings of fruit, in this case peach. There’s no grasping for the flavour on the bag, it hits of peach right away with a toffee and candy finish, unmistakeable. Roasted light/medium, I think something like this works best on filter, but if you enjoy the cup, you could be in for an intense espresso. Make sure to inhale deeply whilst grinding, the smell is amazing.

P.S., This is dearer than my other offerings, you might know I do try hard to keep things accessible, it’s an expensive bean.


THE COFFEE ITSELF

Luz Helena grew up in Armenia and has been producing coffee for the last 20 years. She owns Maracay, an 8-hectare farm located at 1450 m.a.s.l, in Armenia Quindio. Luz is Carlos and Felipe's mother, the co-founders of Cofinet and wife of Jairo Arcila.

Luz's passion for coffee was inspired by her husband's work on coffee farms and as a dry mill manager. Luz would hear Jairo talking about coffee and wanted to be more involved in the industry. With the support of Jairo, Luz started learning how to care for coffee plants and what steps she needed to take to produce high-quality, ripe cherries. Luz found dealing with insects very challenging at the start and would draw on Jairo's knowledge to help with this.

For several years now, her focus has been on producing Specialty Coffee. With the support of Cofinet, Luz has been able to improve farm practices and focus on producing the best cherries she can. Once ripe, the cherries are then processed by Cofinet at our processing station, La Pradera.

When Luz is not tending to her coffee trees, she enjoys spending time with her friends and being part of local support groups for vulnerable people.
