This is an ‘awwww yeeeaaahh’ coffee. 90 cup score.

I don’t know where to start with this. I’ve been roasting coffee for maybe 10 years now? I can count the number of times I’ve seen Wush Wush on one hand. It is an incredibly rare and difficult to grow varietal found in some areas of Colombia, originally ailing from a region of Ethiopia, it is top shelf stuff, foil packed, special stickers, VIP members club level of coffee. (I’m just bunging it in the normal bags, but hopefully you get the idea)

In the cup, Wush Wush is unique, to me a blend of the flavour notes you get from some of the more experimental processes with a floral and fruity Ethiopian lot, lovely stuff. For this one, grown by coffee heavyweight Jairo Arcila, you can expect ripe sweet fruit, along with a big hit of sherbet and florals, very complex and cupped at import at a 90. Not to be missed. It’s roasted light and best suited for filter brews.

As a footnote, this is the dearest coffee I’ve had in before so the price is higher than our other offerings. As you might know, I try very hard to keep our overheads low and I’m hoping this is still an accessible price point for a coffee of this quality.


THE COFFEE ITSELF

Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are the co- founders of Cofinet. Jairo's first job was at Colombia's second-largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019. Jairo bought his first coffee farm, Finca la Esmeralda, in 1987 and this is where he planted his first Caturra lot. He was fortunate enough to earn money by producing coffee on his farm in addition to working full time.

Using his savings, Jairo slowly managed to purchase five additional farms. After Esmeralda came Villarazo, Mazatian, Santa Monica, Maracay and then Buenos Aires. During the harvest period, Jairo is able to provide a number of jobs to locals which has a significant economic impact on their community.

Jairo has received great advice and guidance from his sons who are now experts in producing Specialty Coffee. With their help, Jairo has greatly improved the picking, sorting, and processing of his coffees. His sons have also guided Jairo in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Papayo ,and Gesha growing across all his farms. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavour profiles

This coffee is harvested following strict ripeness criteria, floated and handsorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. This microlot is 100% Wush Wush. This is a rare varietal grown in Colombia. It is believed that it made its way from Ethiopia about 25 years ago.

Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast! But most importantly, he enjoys spending time with his family.
