STRAWBERRY, CACAO & MOLASSES

Our first decaf! We’ve been going for maybe 8 years now and not once have had a decaf in. I normally only get coffee in that I want to drink, and I’ve never really fancied decaf… However increasing blood pressure and recurrent head aches has led me to begin hunting for a decaf I’d happily drink all day long, and here we have it, this sugar cane process decaf sourced through Cofinet in Colombia. The cup is full of red berries with a rich body and works equally well as a filter brew, or espresso, if you’ve been on the lookout for a decaf that’s a little more exciting, I’d say give this a go. Enjoy, and raise a mug to the caffeine withdrawal headaches!

THE COFFEE ITSELF

This coffee is harvested following strict ripeness criteria, later floated and hand-sorted to remove any defects. Cherries are exposed to 30 hours of underwater fermentation before being de-pulped. Parchment is gently washed and later dried under temperature-controlled conditions until ideal moisture content was achieved.

This micro-lot is 100% Tabi. This is a new variety developed by "Federacion Nacional de Cafeteros." This unique variety is a cross between Timor hybrid, Bourbon, and Typica.
